This can result in operational issues and consumer safety. The complexity of tracking a finished product, from its ingredients to associated records, becomes a daunting task, underscoring the need for a more efficient system. Therefore, it is important to highlight the need to improve traceability control systems by incorporating technologies such as SAP ERP systems, Big Data, and Bar Codes, which will allow more efficient and accurate management of information, reducing inconsistencies and eliminating excessive documentation. The importance of traceability as a fundamental pillar of food safety and its obligation in quality standards allows the tracking of products from their origin to the final consumer, this includes the ability to store and communicate information about the quality and origin of the product. The implementation of these technologies can improve visibility and efficiency in the supply chain, facilitating informed decision making and guaranteeing food safety in the face of current challenges.es_ES

dc.description.abstractLas industrias enfrentan desafíos significativos en el control de la trazabilidad de la cadena de suministro, debido a la dependencia de sistemas convencionales que generan un exceso de documentación y dificultan la comunicación y análisis de información. Esto puede resultar en problemas operativos y en la seguridad del consumidor la complejidad de rastrear un producto terminado, desde sus ingredientes hasta los registros asociados, se convierte en una tarea abrumadora, lo que subraya la necesidad de un sistema más eficiente. Por lo que es importante resalta la necesidad de mejorar los sistemas de control de trazabilidad mediante la incorporación de tecnologías como sistemas erp SAP, Big data, y Códigos de barra, que permitirán una gestión más eficiente y precisa de la información, reduciendo inconsistencias y eliminando la documentación excesiva. La importancia de la trazabilidad como pilar fundamental de la seguridad alimentaria y su obligación en las normas de calidad, permite el seguimiento de productos desde su origen hasta el consumidor final, esto incluye la capacidad de almacenar y comunicar información sobre la calidad y origen del producto.
