dc.description | The banana is a fruit with a high production in the Ecuadorian market, but it must meet different quality parameters in order to be exported to different markets, thus having the possibility of generating economic benefits for the producer and the country, however, despite the fact that producers try to comply with the standards to export all their fruit, it is common that due to various circumstances the fruit is not suitable for sending it to the different markets, for this reason it is important to give an added value to that percentage of fruit that is not exported in order to avoid economic losses. With the investigation it was determined that the banana that does not meet the quality parameters established for its export, has different possibilities to obtain an added value such as the production of banana flour, dried fruit, drinks, banana puree, jelly, jam, biomass, starch, etc. By granting the fruit an additional value through the industrialization process, the producer has the possibility of expanding more of the customer market, allowing them to generate additional income and avoid economic losses due to that fruit that did not meet the standards and did not have the possibility of being exported. Opting for the idea of giving added value to a fruit is undoubtedly a good alternative to generate economic income from what was considered loss, throughout the development of this work different options of added value to bananas were shown that could be taken as ideas for the development of new ventures. | es_ES |

dc.description.abstract | El banano es una fruta con una elevada producción en el mercado ecuatoriano, pero debe cumplir diferentes parámetros de calidad para poder ser exportada a distintos mercados teniendo así la posibilidad de generar beneficios económicos al productor y al país, sin embargo, a pesar de que los productores intentan cumplir con los estándares para exportar toda su fruta, es común que por diversas circunstancias la fruta no sea apta para enviarla a los distintos mercados, por dicha razón es importante darle un valor agregado a ese porcentaje de fruta que no es exportada para así evitar pérdidas económicas. Con la investigación sé determinó que el banano que no cumple con los parámetros de calidad establecidos para su exportación, tiene distintas posibilidades para obtener un valor agregado como la producción de harina de banano, fruta seca, bebidas, puré de banano, jalea, mermelada, biomasa, almidón, etc. El productor al otorgar a la fruta un valor adicional mediante el proceso de industrialización tiene la posibilidad de ampliar más mercado de clientes permitiendo generar ingresos adicionales y evitar pérdidas económicas por aquel fruto que no cumplió los estándares y no tuvo la posibilidad de ser exportado. Optar por la idea de darle valor agregado a una fruta es sin duda una buena alternativa para generar ingresos económicos a partir de aquello que se consideraba pérdida, a lo largo del desarrollo del presente trabajo se mostraron diferentes opciones de valor agregado al banano que podrían ser tomadas como ideas para el desarrollo de nuevos emprendimientos. | es_ES |
