dc.descriptionThe main objective of this study was to determine the milling quality of the promising rice line L-38, cultivated in the Pueblo Viejo area, province of Los Ríos. Given that rice is one of the most consumed foods worldwide and a fundamental pillar of food security, it was crucial to evaluate the factors that affect the quality of this grain. During the research, various parameters related to grain quality are analyzed, such as the weight (g) of husk, percentage (%) of moisture, weight (g) of brown rice, weight (g) of white mass, weight (g) of powder, weight (g) of broken grain, weight (g) of whole grain, percentage (%) of whiteness, amylose and protein content, and the evaluation of the white center. These analyses were conducted in the Grain Laboratory of the Faculty of Agricultural Sciences at the Technical University of Babahoyo, using specialized equipment. The results obtained in the classification of whole grain rice indicated that the promising line L-38 presented a higher average weight, reaching 658.08 g, while the commercial variety SFL-11 obtained 621.38 g. Regarding the amylose content, the values were similar, with 25.73% in L-38 and 24.00% in SFL-11. Regarding the whiteness percentage, the promising line L-38 recorded an average of 40.80%, slightly higher than the 39.70% of the commercial variety. In protein, L-38 reached 9.13%, while SFL-11 obtained 8.47%, showing a minimal difference. Overall, both cultivars exhibited very similar milling characteristics with slight variations.es_ES

dc.description.abstractEl presente estudio tuvo como objetivo principal determinar la calidad molinera de la línea promisoria de arroz L-38 y la SFL-11, cultivadas en la zona de Puebloviejo, provincia de Los Ríos. Dado que el arroz es uno de los alimentos más consumidos a nivel mundial y un pilar fundamental de la seguridad alimentaria, fue crucial evaluar los factores que afectan la calidad de este grano. Durante la investigación, se analizaron diversos parámetros relacionados con la calidad del grano, tales como el peso (g) de cascarilla, porcentaje (%) de humedad, peso (g) de arroz integral, peso (g) de masa blanca, peso (g) de polvillo, peso (g) de grano quebrado, peso (g) de grano entero, porcentaje (%) de blancura, contenido de amilosa y proteína, y la evaluación del centro blanco. Estos análisis fueron realizados en el Laboratorio de Granos de la Facultad de Ciencias Agropecuarias de la Universidad Técnica de Babahoyo, utilizando equipos especializados. Los resultados obtenidos en la clasificación del arroz por grano entero indicaron que la línea promisoria L-38 presentó un mayor peso promedio, alcanzando 658,08 g, mientras que la variedad comercial SFL-11 obtuvo 621,38 g. En cuanto al contenido de amilosa, los valores fueron similares, con 25,73 % en L-38 y 24,00 % en SFL-11. Respecto al porcentaje de blancura, la línea promisoria L-38 se registró un promedio de 40,80 %, ligeramente superior al 39,70 % de la variedad comercial. En proteína, L-38 alcanzó un 9,13 %, mientras que SFL-11 obtuvo un 8,47 %, mostrando una diferencia mínima. En conclusión, ambos cultivares presentaron características molineras muy similares con ligeras variaciones.es_ES
