dc.descriptionThis research work is of great relevance, since it reveals to the consumer and the producer the quality of the grains of new rice cultivars. The objective of this study was to evaluate the milling quality of the promising line of rice L-07 in the area of Montalvo, province of Los Ríos. To carry out this research, a methodology was used that consisted of two rice cultivars, L-07 and SFL-11, with three replications each. The process was carried out in the Grain Laboratory of FACIAG-UTB, which has specialized equipment to dry, clean, hull, polish, obtain dust, rice, as well as to measure the moisture content and amylose content. The variables evaluated included: husk weight (g), moisture percentage (%) brown rice weight (g), white mass weight (g), dust weight (g), broken grain weight (g), whole grain weight, whiteness, as well as percentage (%). For statistical analysis, a completely randomized design (CRD) and Tukey's analysis at 5% probability were applied to compare means. Cultivar L-07 had higher hull content, dust and broken rice weight, whiteness, amylose, and yield than cultivar SFL-11, but the latter cultivar had higher whole grains, whole grain weight, white mass, protein, and density than cultivar L-07. The amylose content of cultivar L-07 was 31.90% higher than that of cultivar SFL-11, which obtained a percentage of 26.93%.es_ES

dc.description.abstractEl presente trabajo de investigación tiene una gran relevancia, ya que revela al consumidor y al productor la calidad de los granos de nuevos cultivares de arroz. El objetivo de este estudio fue evaluar la calidad molinera de la línea prometedora de arroz L-07 en la zona de Montalvo, provincia de Los Ríos. Para llevar a cabo esta investigación, se empleó una metodología que consistió en dos cultivares de arroz, L-07 y SFL-11, con tres repeticiones cada uno. El proceso se realizó en el Laboratorio de Granos de la FACIAG-UTB, que cuenta con equipos especializados para secar, limpiar, descascarar, pulir, obtener polvillo, arrocillo, así como para medir el contenido de humedad y el contenido de amilosa. Las variables evaluadas incluyeron: el peso (g) de la cascarilla, el porcentaje (%) de humedad, el peso (g) de arroz integral, el peso (g) de masa blanca, el peso (g) de polvillo, el peso (g) de granos quebrados (arrocillo), el peso de granos enteros, la blancura, así como el porcentaje (%) de amilosa y proteína. Para el análisis estadístico, se aplicó un diseño completamente al azar (DCA) y el análisis de Tukey al 5% de probabilidad, para la comparación de medias. El cultivar L-07 posee mayor cantidad de cascarilla, peso del polvillo y arroz quebrado, blancura, amilosa y rendimiento que el cultivar SFL-11, pero este último cultivar posee mayores granos enteros, peso de grano integral, masa blanca, proteína y densidad que el cultivar L-07. El contenido de amilosa en el cultivar L-07 fue superior con 31,90 % que en el cultivar SFL-11 con el que se obtuvo un porcentaje de 26,93 %.es_ES
