dc.descriptionThe present research work is of great importance, since it makes known to the consumer or producer the quality of the grain of new rice cultivars. The objective of this research was to determine the milling quality of the promising line of rice L-37 in the Yaguachi area, province of Guayas. Two rice cultivars with three replications were used: L – 37 and SFL – 11. In this process, the Grain Laboratory of FACIAG-UTB was used, which has equipment that was used to dry, clean, hull, polish, cleaning dust, rice, measure moisture content and amylose content. The variables evaluated were: Weight (g) of husks, percentage (%) of moisture, weight (g) of brown rice, weight (g) of white dough, weight (g) of dust, weight (g) of broken grains - rice, weight of whole grains, whiteness, percentage (%) of amylose and protein content. For the statistical analysis, the non-parametric design of Kruskal Wallis analysis was used, including the comparison of means. As for the results, in relation to the classified rice or whole grains expressed in grams, they showed that the sample of the commercial variety SFL-11 registers a higher weight, presenting 661.40 g that transformed into percentage would be 66.14 % of whole grains. Based on the amylose content, it is observed that in the commercial variety SFL-11 it had a value of 21.91 %, while the promising line L-37 obtained a value of (21.77 %), concluding that the amylose contents are similar between the cultivars. On the other hand, the promising line L-37 presented an average of 42.75% whiteness; while the commercial variety SFL-11 obtained an average of 40.75% whiteness. Regarding proteins, it was determined that the promising line L-37 has an average of 9.47%, while the commercial variety SFL-11 has an average of 9%, observing that there is no protein difference between the two cultivars. It is concluded that the milling quality of these two cultivars are similares_ES

dc.description.abstractEl presente trabajo de investigación tiene una gran importancia, ya que se da a conocer al consumidor o productor la calidad del grano de nuevos cultivares de arroz. El objetivo de esta investigación fue determinar la calidad molinera de la línea promisoria de arroz L – 37 en la zona Yaguachi, provincia del Guayas. Se utilizaron dos cultivares de arroz con tres repeticiones como son: L – 37 y SFL – 11. En este proceso se utilizó el Laboratorio de Granos de la FACIAG-UTB que posee equipos que sirvieron para secar, limpiar, descascarar, pulir, obtener polvillo, arrocillo, medir el contenido de humedad y contenido de amilosa. Las variables evaluadas fueron: Peso (g) de cascarilla, porcentaje (%) de humedad, peso (g) de arroz integral, peso (g) de masa blanca, peso (g) de polvillo, peso (g) de granos quebrados - arrocillo, peso de granos enteros, blancura, porcentaje (%) de contenido de amilosa y proteína. Para el análisis estadístico se utilizó el diseño no paramétrico de análisis de Kruskal Wallis incluyendo la comparación de medias. En cuanto a los resultados, con relación al arroz clasificado o granos enteros expresados en gramos, se mostró que la muestra de la variedad comercial SFL-11 registra un peso mayor, presentando 661,40 g que transformado en porcentaje seria 66,14 % de granos enteros. En función del contenido de amilosa, se observa que en la variedad comercial SFL-11 tuvo un valor de 21,91 %, mientras que la línea promisora L-37 obtuvo un valor de (21,77 %), concluyendo que los contenidos de amilosa son similares entre los cultivares. Por otro lado, la línea promisoria L-37 presentó un promedio de 42.75 % de blancura; mientras que, la variedad comercial SFL-11 obtuvo un promedio 40,75 % de blancura. En cuanto a las proteínas, se determinó que la línea promisoria L-37 tiene un promedio de 9,47%, mientras que la variedad comercial SFL-11 tiene un promedio de 9 %, observándose que no hay diferencia de proteína entre los dos cultivares. Se concluye que la calidad molinera de estos dos cultivares son similares.es_ES
