| dc.description | Cultural gastronomy is also a discipline that analyzes the correlation of the human being with his livelihood, the natural environment from which he obtains food resources and the way he manages them, as well as the social and cultural aspects that intercede in the relationship that each community institutes with its gastronomy. The present research work is based on a cultural gastronomic proposal for the tourist growth of the Mocache canton, with emphasis on the rescue and propagation of its typical cuisine since, due to being a small sector, there is ignorance of the habits referred to, by reason that there is no appropriate publicity to promote internal tourism, so that it is made known in other locations. Therefore, it is essential that a cultural gastronomic offer of the original preparations of the town be established, with past customs that are maintained from generation to generation, that is why with the elaboration of the proposal called Tourist Offer for the promotion of gastronomic Cultural and tourism growth in the Mocache canton is intended to contribute to the economic development of the place. In addition, through this research work it is intended to promote the rescue of the gastronomic culture of the Mocache canton, surrounding and rural sectors, to contribute to the tourism development of gastronomy that helps boost the growth of the referred area. | es_ES |

| dc.description.abstract | La gastronomía cultural es también una disciplina que analiza la correlación del ser humano con su sustento, el medio natural del cual consigue los recursos alimenticios y la manera en que los maneja, así como los aspectos sociales y culturales que interceden en la relación que cada colectividad instituye con su gastronomía. El presente trabajo de investigación se basa en una propuesta gastronómica cultural para el crecimiento turístico del cantón Mocache, con énfasis en el rescate y propagación de su cocina típica, debido a ser un sector pequeño, existe el desconocimiento de los hábitos referidos, por razón de que no hay una publicidad apropiada para promover el turismo interno, de manera que se dé a conocer en otras localidades. Por ello, es fundamental que se establezca una oferta gastronómica cultural de las preparaciones originarias de la localidad, con costumbres pasadas que se mantienen de generación en generación, es por esto que con la elaboración de la propuesta denominada Oferta turística para la promoción de la gastronómica cultural y el crecimiento del turismo en el cantón Mocache se pretende aportar en el desarrollo económico del lugar. Además, por medio de este trabajo investigativo se pretende impulsar el rescate de la cultura gastronómica del cantón Mocache, sectores aledaños y rurales, logrando contribuir con el desarrollo turístico de la gastronomía que ayude a impulsar el crecimiento de la zona referida. | es_ES |
