This information allowed us to analyze the value added to the vegetable harvest in the rural areas of Babahoyo Canton, as a context we can mention that the vegetable production is destined for internal consumption and is marketed as a minimally processed fresh vegetable in the country's markets and supermarkets. The information collected was carried out under the techniques of analysis, synthesis and summary. The results show that the added value in the harvest of vegetables in the rural areas of Babahoyo Canton is in the management of the crop under traditional or organic production, packaging and labeling of fresh vegetables. Processed vegetables are at a low level in these areas because there are no industries that transform vegetables into a processed product or by-product. Vegetable crops in the country are presented as an alternative non-traditional crop for small and medium farmers, with high production rates in different areas of the country, due to the wide variety of vegetables that are adapted to agro-edaphoclimatic conditions, the transformation of the vegetable harvest through conservation techniques allows giving added value, avoiding post-harvest losses resulting in a processed product with projection in national and international sales, allowing to generate economic benefits for the agricultural sector of the country.es_ES
