dc.descriptionGastronomic tourism has become a key tool for the economic and cultural development of local communities. This study analyzes the potential of gastronomic tourism in the canton of Mocache, Province of Los Ríos, Ecuador, aiming to identify its importance, categorize its gastronomic offerings, and propose promotion strategies. Using a mixed-method approach, surveys were conducted with 381 residents, along with interviews with key stakeholders, direct observation, and the implementation of digital promotion strategies. The results show that typical dishes such as Encanutado de Bocachico and Hornado de Chancho have high cultural and touristic value, although weaknesses were identified in promotion and service quality. It is concluded that gastronomic tourism can be a driver of development for Mocache, provided that actions are taken to improve infrastructure, strengthen promotion, and encourage community participation.es_ES

dc.description.abstractEl turismo gastronómico se ha convertido en una herramienta relevante y determinante en el desarrollo económico-cultural de las comunidades locales. Por tal razón, el presente estudio analiza el potencial del turismo gastronómico en el cantón Mocache, Provincia de Los Ríos, Ecuador, e intenta conocer su importancia, clasificar la oferta gastronómica y proponer estrategias de promoción. A través de un enfoque mixto, se aplicaron encuestas a 381 habitantes y potenciales turistas, se empleó la observación directa, como también el muestreo bola de nieve, por otro lado. Los resultados muestran que platos típicos como el Encanutado de Bocachico o el Hornado de Chancho tienen un elevado valor cultural y turístico, aunque se han hallado debilidades en la promoción y en la calidad de los servicios. Conclusión, el turismo gastronómico puede ser un motor de desarrollo para Mocache, siempre que las acciones propuestas para mejorar la infraestructura, la promoción y el fomento de la participación comunitaria se lleven a la práctica.es_ES
