dc.description | This case study is related to the administrative process, which fits within four areas such as planning, organization, direction and control. The lack of a hierarchical structure within the establishment is responsible for the poor production they develop every day. The little administrative knowledge on the part of the owner and work team does not allow them to achieve great results that generate extremely successful income for the Flor Del Azuay Bakery and Pastry Shop. This case study was carried out focused directly on the production area in order to reduce unnecessary expenses and at the same time, with good investments in raw materials, achieve good production, which is carried out daily. The Flor Del Azuay bakery and candy store at a business level is located within SMEs, which is of utmost importance to carry out an adequate administrative process, responsibly fulfilling each of its stages in order to achieve a minimum margin of error in its production. which they do daily because they produce essential food products. dc.description.abstract | El presente estudio de caso va relacionado con el proceso administrativo, el cual se encaja dentro de cuatro áreas como la planificación, organización, dirección y control. La falta de una estructura jerárquica dentro del establecimiento es el responsable de la mala producción que desarrollan día a día. El poco conocimiento administrativo por parte del propietario y equipo de trabajo no les permite alcanzar grandes resultados que generen ingresos sumamente exitosos para la Panadería y Pastelería Flor Del Azuay. Se realizó el presente estudio de caso enfocado directamente en el área de producción con finalidad de reducir gastos innecesarios y a su vez con buenas inversiones de materia prima alcanzar una buena producción la cual realizan diariamente. La panadería y dulcería Flor Del Azuay a nivel empresarial se encuentra dentro de las PYMES, lo cual es de suma importancia llevar un adecuado proceso administrativo cumpliendo con responsabilidad cada una de sus etapas para de esta manera alcanzar un mínimo margen de error en su producción la cual realizan diariamente debido a que producen productos alimenticios de primera necesidad. Se lleva a cabo una metodología descriptiva la cual permite agrupar información relevante, adjuntando los instrumentos utilizado como la entrevista dirigida directamente al propietario y las encuestas a los trabajadores. | es_ES |
