dc.description.abstract | El presente documento se desarrolló con el fin de estudio de concentración de proteínas de granos de arroz a nivel de centros de acopio minoristas en la zona de Babahoyo. Para poder analizar y generar información respecto a la calidad del grano que se llega a comercializar de manera minorista en la ciudad, debido a la falta de información y poco conocimiento sobre la población respecto a la importancia del industrial (capacidad molinera) y calidad del grano de arroz. Haciendo referencia al valor nutricional este nos brinda beneficios ya que, al ser una fuente de carbohidratos, este nos provee energía, además posee porcentajes medios de almidón, proteínas y vitaminas, por lo que la incertidumbre se presenta al cuestionar si el producto cosechado que llega a comerciales presenta los valores adecuados para poder ser comercializado y consumido por la población local, esto con el fin también de concientizar el manejo del cultivo por parte del productor, esto permitiría elevar la calidad industrial de nuestro producto y a su vez cumplir con los estándares de comercio en cuestiones de rendimiento y calidad para cada consumidor regional.
