dc.descriptionThis document detailed the postharvest handling of carrot (Daucus carota L.) for commercialization. The carrot is one of the most cultivated vegetables in the world. Its consumption has spread widely, since it is currently available in the markets throughout the year. The consumed part of the carrot is its root, of which there are multiple forms and flavors. It stands out for its content of carotene and vitamins A, B and C. The carrot is sold directly by farmers, trying to improve their economic income through the direct distribution and sale of the raw material. The conclusions determine that postharvest is the set of operations and functions between production and consumption developed by different actors with the aim of achieving an effective and efficient supply of carrots. This includes preparation for market (cleaning, sorting and packing), transport and marketing. It is a system that is closely related to productive activities and attentive to the needs and demand of consumers. All the previous productive and environmental aspects condition the quality of the product and eventually that which reaches the consumer, since in the post-harvest the quality cannot be improved but only standardized as well as reducing the rate of natural deterioration after harvest and because carrots are eaten fresh, the hygiene of the facilities and equipment as well as operations are important to avoid contamination by microorganisms not visible to the naked eye or detectable through changes in appearance, taste, color or other external characteristics , but harmful to health.es_ES

dc.description.abstractEl presente documento detalló sobre el manejo postcosecha del cultivo de zanahoria (Daucus carota L.) para su comercialización. La zanahoria es una de las hortalizas más cultivadas en el mundo. Su consumo se ha extendido ampliamente, ya que actualmente se encuentra disponible en los mercados durante todo el año. La parte consumida de la zanahoria es su raíz, de la que existen múltiples formas y sabores. Destaca por su contenido en caroteno y vitaminas A, B y C. La comercialización de la zanahoria la realizan directamente los agricultores, tratando de mejorar sus ingresos económicos mediante la distribución y venta directa de la materia prima. Las conclusiones determinan que la postcosecha es el conjunto de operaciones y funciones entre la producción y el consumo desarrollados por diferentes actores con el objetivo de alcanzar un efectivo y eficiente abastecimiento de zanahorias. Se incluye aquí a la preparación para mercado (limpieza, clasificación y empaque), transporte y comercialización. Es un sistema que se halla íntimamente relacionado con las actividades productivas y atentas a las necesidades y demanda de los consumidores. Todos los aspectos productivos y ambientales previos condicionan la calidad del producto y eventualmente la que llega al consumidor, ya que en la postcosecha no se puede mejorar la calidad sino solamente uniformarla así como disminuir el ritmo de deterioro natural después de la cosecha y debido a que las zanahorias son consumidas en fresco, la higiene de las instalaciones y equipos así como de las operaciones, son importantes para evitar la contaminación por microorganismos no visibles a simple vista ni detectables a través de cambios en la apariencia, sabor, color u otra característica externa, pero nocivos para la salud.es_ES
