dc.descriptionMilk is a source of energy and mineral proteins that are essential for human develop-ment, therefore it is necessary to ensure its safety and guarantee food security. In this present investigation, a total of 11 analyzes were carried out on production units located in Babahoyo Province of Los Ríos, which were evaluated following the estab-lished criteria such as risk factors and quantitative quality parameters. The main objec-tive was to determine if the risk factors are an indicator for the variables analyzed when obtaining the samples and taking them to laboratory studies in which the following was verified: Regarding the presence of antibiotics in raw milk, it was determined that of 100% of the 11 farms analyzed, 72% were positive for antibiotics while 27% were negative for the same parameter. In the test carried out for peroxide in raw milk, there is 0% as a result of the analysis. The density and temperature of the raw milk was evaluated through the alcohol test, resulting in the 11 farms complying with the NTE INEN 9:2012, which mentions that its density must be between 1,029 to 1,033 g/ml, as -To the protein stabil-ity, 8 positive and 3 negative for this parameter were obtained, resulting in the first 8 farms being positive, having a percentage of 100% each and the last 3 samples were negative, therefore their incidence is 0. %.es_ES

dc.description.abstractLa leche es una fuente de energía proteínas y minerales que son esenciales para el desarrollo humano por ende es necesario asegurarnos de su inocuidad y de garanti-zar la seguridad alimentaria. En esta presente investigación se realizó un total de 11 análisis a unidades de pro-ducción ubicadas en Babahoyo Provincia de Los Ríos, las cuales fueron evaluadas siguiendo los criterios establecidos como los factores de riesgo y parámetros cuantita-tivos de calidad. El objetivo principal fue determinar si los factores de riesgo son un indicador para las variables analizadas al obtener las muestras y llevarlas a estudios de laboratorio en la cual se comprobó lo siguiente: En cuanto a la presencia de antibiótico en la leche cruda se determinó que del 100% de las 11 fincas analizadas el 72% resultaron positivas a antibiótico mientras que el 27% resultaron negativas al mismo parámetro , en la prueba realizada de peróxido en leche cruda existe un 0% como resultado del análisis. Se evaluó la densidad y temperatura de la leche cruda mediante la prueba de alcohol teniendo como resultado que las 11 fincas cumplen con la NTE INEN 9:2012 donde mencionan que la densidad de la misma debe estar entre 1,029 a 1,033 g/ml , en cuan-to a la estabilidad proteica se obtuvo 8 positivos y 3 negativos a este parámetro dando como resultado que las primeras 8 fincas al ser positivas tienen un porcentaje del 100% cada una y las 3 últimas muestras resultaron negativas por lo tanto su inciden-cia es del 0%.es_ES
