dc.descriptionThe present investigation was carried out in the Urdaneta canton, province of Los Ríos, with the purpose of identifying the main food products of the gastronomic fairs of Urdaneta that are exposed as an attraction of the culinary culture of the canton, which will allow the Urdanetense community to spread their gastronomic traditions by organizing events. Ecuador is a diverse country with a wide range of food and beverage preparation methods. For this reason, gastronomic tourism offers visitors the opportunity to get closer and learn more about the culinary culture that characterizes each region of the country, as well as to obtain a closer knowledge and learn about the recipes of traditional dishes of the past. Nowadays, gastronomic fairs are held periodically in Ecuador with the aim of promoting gastronomic tourism as a source of economic and tourist growth for the country, as well as helping the used, maintaining the culinary identity, and boosting the Food sovereignty through the consumption of healthy foods offered by ancestral cuisine. It should be noted that the gastronomy the Urdaneta canton has many secrets that must be shared with other people. This research has a mixed approach, in order to obtain relevant and precise information on the main food products that are exhibited in the gastronomic fairs of the Urdaneta canton, the deductive and inductive method was applied, as well as the survey and interview techniques to the Urdanetense population. and visitors, in which favorable results were obtained.es_ES

dc.description.abstractLa presente investigación se realizó en el cantón Urdaneta, provincia de Los Ríos, con la finalidad de identificar los principales productos alimenticios de las ferias gastronómicas de Urdaneta que se exponen como atractivo de la cultura culinaria del cantón, lo que permitirá a la comunidad Urdanetense difundir sus tradiciones gastronómicas mediante la organización de eventos. Ecuador es un país diverso con una amplia gama de métodos de preparación de alimentos y bebidas. Por ello el turismo gastronómico brinda la oportunidad a los visitantes acercarse y conocer más sobre la cultura culinaria que caracteriza a cada región del país, así como para obtener un conocimiento más de cerca y aprender sobre las recetas de platos tradicionales del pasado. Hoy en día, las ferias gastronómicas se llevan a cabo regularmente en Ecuador con el objetivo de promover el turismo gastronómico como una fuente de crecimiento económico y turístico para el país, así como ayudar a la preservación, mantenimiento de la identidad culinaria, e impulsar la soberanía alimentaria a través del consumo de alimentos saludables que ofrece la cocina ancestral. Cabe recalcar que la gastronomía del cantón Urdaneta tiene muchos secretos que deben ser compartidos con las demás personas. Esta investigación tiene un enfoque mixto, para así obtener información relevante y precisa sobre los principales productos alimenticios que se exhiben en las ferias gastronómicas del cantón Urdaneta, se aplicó el método deductivo e inductivo, así como las técnicas de encuesta y entrevista a la población Urdanetense y visitantes, en la cual se obtuvo resultados favorables.es_ES
