International markets are very demanding because they always look for the best quality product or service, which is why the countries that export fine aroma cocoa specialize in the production of highly qualified cocoa that meets the demands and requirements of the consumers. potential customers, which guarantees growth for the local and national economy. One of the important aspects in cocoa productive development is the quality of the grain and the level reached will determine the demand it has in the market. The research was carried out based on information from bibliographic sources such as books, magazines, essays, scientific articles related to the production and marketing of cocoa. For what was detailed above, it was determined that the knowledge and compliance with the quality characteristics of the cocoa bean demanded internally and externally by trade will allow us to increase cocoa production and guarantee the improvement of our economy; Ecuadorian cocoa stands out for the quality of the grain, for its aroma and flavor, being an important factor to stay in the international market, in addition, the quality of cocoa production depends on factors such as the genetic type, the natural conditions of the plantation site and the general management of the crop.es_ES

dc.description.abstractEl presente documento fue desarrollado con el objetivo de aumentar el conocimiento sobre las características de calidad del grano de cacao fino de aroma ecuatoriano demandadas por el comercio nacional e internacional. Ecuador es el primer productor de Cacao Fino de Aroma, el cual es requerido a nivel mundial por su privilegiada calidad. Los mercados internacionales son muy exigentes debido a que siempre buscan el producto o servicio de mejor calidad, es por ello que los países que exportan cacao fino de aroma, se especializan en la producción de un cacao altamente calificado que cumpla las demandas y exigencias de los clientes potenciales, lo que garantiza un crecimiento para la economía local y nacional. Uno de los aspectos importantes en el desarrollo productivo cacaotero es la calidad del grano y el nivel que se alcance determinará la demanda que posea en el mercado. La investigación se realizó en base a información de fuentes bibliográficas tales como libros, revistas, ensayos, artículos científicos relacionados con la producción y comercialización de cacao. Por lo que fue detallado anteriormente se determinó que el conocimiento y cumplimiento de las características de calidad del grano de cacao demandadas interna y externamente por el comercio nos permitirá elevar la producción de cacao y garantizar la mejora de nuestra economía; el cacao ecuatoriano destaca por la calidad del grano, por su aroma y sabor siendo un factor importante para mantenerse en el mercado internacional, además la calidad de la producción de cacao depende de factores como el tipo genético, las condiciones naturales del sitio de plantación y el manejo general del cultivo.es_ES
