dc.descriptionRice cultivation began about 10,000 years ago in the humid regions of tropical and subtropical Asia. India may be the country where this cereal was first cultivated. Oryza sativa is the most important cereal in developing countries and is considered a staple food for more than half of the world's population. Certain factors have been identified that determine grain quality, and it is precisely in the milling process that these parameters are recognized. Studies have shown that quality begins with the control of the culture itself and depends on whether it reflects a higher piling index. With these notions, it is established as a research question: What are the industrial rice milling processes and the commercialization of this production, which gives rise to the general objective of determining the industrial rice milling processes and their commercialization. The methodology of this work is of qualitative scope since it provides data that describe the nature of the studied subject from the observation and validation of the events of a certain phenomenon. Giving as main conclusion that through this case study, we were able to discover the intermittent mismanagement of the industrial process of rice milling, especially among small farmers engaged in rice production in rural areas of Babahoyo Canton, and generating recommendations such as producing an in-depth study that provides details and opportunities for improvement of the process of rice milling industry.es_ES

dc.description.abstractEl cultivo del arroz comenzó hace unos 10.000 años en las regiones húmedas de Asia tropical y subtropical. India puede ser el país donde se cultivó por primera vez este cereal. Oryza sativa es el cereal más importante en países en desarrollo y se considera alimento básico para más de la mitad de la población mundial. Se han identificado ciertos factores que determinan la calidad del grano, y es precisamente en el proceso de molienda donde se reconocen estos parámetros. Los estudios han demostrado que la calidad comienza con el control de la cultura en sí y depende de si refleja un índice de pilado más alto. Con estas nociones se establece como pregunta de investigación ¿Cuáles son los procesos industriales molineros de arroz y la comercialización de esta producción?, lo cual da cabida al objetivo general delineado a Determinar los procesos industriales molineros de arroz y su comercialización. La metodología de este trabajo es de ámbito cualitativo ya que proporciona datos que describen la naturaleza del tema estudiado a partir de la observación y validación de los sucesos de cierto fenómeno. Dando como conclusión principal que, a través de este estudio de caso, pudimos descubrir el mal manejo intermitente del proceso industrial de molienda de arroz, especialmente entre los pequeños agricultores dedicados a la producción de arroz en las zonas rurales del Cantón Babahoyo, y generando recomendaciones como producir un estudio en profundidad que proporcione detalles y oportunidades de mejora del proceso de la industria de molienda de arroz.es_ES
