dc.description.abstractLa información detallada enfatiza sobre el uso y aplicación de los derivados del cultivo de girasol (Helianthus annuus L.) en la agroindustria Ecuatoriana. Los productos principales obtenidos del girasol son la harina, utilizada en la industria de alimentos, con contenido de proteínas entre el 40 – 50 % para consumo del ganado y el aceite comestible para consumo humano. Las conclusiones determinan que no se evidencia información sobre las características de los procesos agroindustriales del cultivo de girasol en el Ecuador; en otros países, como Argentina, el girasol es uno de los principales cultivos que representa la materia prima para productos de importación y exportación; entre los derivados del girasol se presenta la harina, aceites, biocombustible y otros derivados que sirven para beneficio de alimentación, tanto de personas y de ganado y existen pocas hectáreas sembradas en el país, lo que se estima que no existe importancia por parte de los agricultores para sembrar este cultivo como alternativa para mejorar sus ingresos económicos y que a su vez generen fuentes de empleo. Por lo tanto es importante capacitar a los agricultores sobre la importancia del girasol, como materia prima para diversos productos y ejecutar investigaciones de campo y de producción para lograr obtener investigación científica relevante.es_ES
