dc.descriptionAll companies currently operate in dynamic environments, since the food and beverage sector is one of the most important in the country due to its capacity to generate employment, it is necessary for the companies that operate in it to be efficient to satisfy the requirements of foreign and national tourism. This situation and the shortcomings that the Canoero restaurant shows due to the LACK of a technical management based on processes, justify the development of the research "Analysis of productivity in sales of the Canoero restaurant in the city of Babahoyo", which seeks to provide knowledge to entrepreneurs, to determine the best processes in the production of food, and generate substantial positive changes in their companies. In its content, first of all, specialized literature related to the management and improvement of processes in companies of the food and beverage sector is presented; then the processes developed by Canoero restaurant are diagnosed, showing that there is a moderate low risk that they are inefficient regarding the compliance with the GMP system; in the products and services there is a moderate low risk that the quality is not adequate; The findings motivate the proposal of a management model that promotes the continuous improvement of the processes of the Canoero restaurant, this is positive because if the company has good food manufacturing practices (GMP), it will generate an attractive value offer for its customers, and will achieve benefits by increasing sales and optimizing the use of resources. The success of the proposal will depend on the commitment of the owners and managers to generate communication links with the personnel and minimize the resistance and inconveniences that may arise in the implementation process.es_ES

dc.description.abstractTodas las empresas actualmente operan en entornos dinámicos, ya que el sector de alimentos y bebidas es uno de los más importantes del país por su capacidad para generar empleo, es necesario que las empresas que en él operan sean eficientes para satisfacer los requerimientos del turismo extranjero y nacional. Esta coyuntura y las falencias que el restaurante Canoero evidencia por la escases de una gestión técnica basada en procesos, justifican desarrollar La investigación “Análisis de la productividad en ventas del restaurante Canoero de la ciudad de Babahoyo”, que busca aportar conocimiento a emprendedores, para que determinen los mejores procesos en la producción de alimentos, y generen cambios positivos sustanciales en sus empresas. En su contenido en primer lugar se expone literatura especializada relacionada a la gestión y mejora de procesos en empresas del sector de alimentos y bebidas; posteriormente se diagnostican los procesos que desarrolla restaurante Canoero, evidenciándose que existe riesgo moderado bajo que sean ineficientes respecto al cumplimiento del sistema BPM; en los productos y servicios existe riesgo moderado de que la calidad no sea la adecuada; las capacidades estratégica, legal, administrativa, organizacional, financiera, de recurso humano y tecnológico, evidencian la presencia de serias deficiencias en la gestión; los hallazgos motivan la propuesta de un modelo de gestión que promueve el mejoramiento continuo de los procesos del restaurante Canoero, ésta es positiva ya que si la empresa dispone de buenas prácticas de manufactura de alimentos (BPM), generará una oferta de valor atractiva para sus clientes, y logrará beneficios por el incremento en las ventas y la optimización en el uso de recursos. El éxito de la propuesta dependerá del compromiso de los propietarios y administrador, para generar vínculos de comunicación con el personal, y minimizar la resistencia y e inconvenientes que pudiesen surgir en el proceso de implementación.es_ES
